We often find ourselves discussing how the new millennium has brought with it this wave of innovation, giving the market and therefore the consumer these valuable alternatives to those foods, products or ingredients that many of us can not digest, or prefer to avoid for a question of well-being and respect for the environment!
There are many subjects intolerant to the enzyme of lactose, unfortunately more and more frequent cases where you find yourself having to say NO to many foods including the most common cheeses, mozzarella and many other micro ingredients, contained in small quantities in many other foods.
Many others have simply chosen a more responsible lifestyle dictated by the trend, that is, the one that drives us to desire different, healthier and nutritious foods, sometimes richer and more complete!
In this article we take a closer look at the new generation products, tasty alternatives, simple and sustainable, organic in nature, and absolutely environmentally friendly! there will certainly be a reference to mixology and we will offer you a couple of tips on how to create a tasty “Rum Egg-nog” cocktail, for the first time made with an almond milk mixed with cashews, homemade!
The top 6 alternatives, a brief mention of properties and a brief analysis of taste!
1- Almond milk: the most common, the most consumed and easily digestible, with a thick, viscous taste, sometimes with an ocher yellow color, can be naturally sweetened or lightened to 100% (unsweetened) … together with the soy milk was among the very first to come out on the international market, almond is among the best known “superfoods”; some nutritionists claim that it has less fat, carbohydrates and calories than soy milk, but most of all, it has a significant extra gear for those on a calcium-rich diet. 4- The milk of oats: herbaceous taste, has the scent of the countryside, those who grew up near the fields will hear the call! Provides all the nutritional benefits of oats, a whole grain rich in fibers, minerals; also like the previous ones helps to lower bad cholesterol and avert hypertension. it is to report a low fiber content, which therefore makes it not the BEST to promote digestion, it is certainly not the easiest to digest.
5- Rice milk: in our experiment we used the so-called “Brown Rice”, to make everything more tasty and innovative. rice milk is rich in simple sugars, easily edible, digestible and less harmful to the body. the rice milk is easily reproducible at home, simply by boiling the rice until it becomes a soft mush, so that it releases all its nectar and all the sugars present inside it. then simply let it cool, it should be filtered with a very fine cloth and we do not recommend adding sugar, but if you like it more sweet … better with natural sugars! Unfortunately, in addition to lactose, in the rice milk there is a shortage of some precious nutrients contained in cow’s milk. For example, vitamin B12 and vitamin D are lacking, while calcium concentrations are significantly lower, as is the protein content.
6- milk made from tiger nuts! still superfoods! the Spaniards and the South Americans make great use of it, preparing the famous “Agua de Horchata” with the tiger nuts; non-alcoholic drink widely diffused and recommended in the hot summer days! rich in POTASSIUM, MAGNESIUM and FIBER! are you ready to impress preparing a drink based on tiger nuts? nothing simpler!

Finally we move to mixology: we prepare a variant based on vegetable milk, inspired by the cocktail “rum egg-nog” cousin of the most classic “brandy egg-nog”, simply based on rum, milk, and eggs (we know very well that the eggs are of animal origin and we could have chosen another drink) but we are talking about alternatives to cow’s milk, and who knows soon we will prepare a COMPLETE VEGETABLE! but unfortunately the eggs are the second most important ingredient of the drink and we decided to close … one eye!
